XL Foods Inc. has strict Quality Assurance program in
place at all facilities to ensure product quality and safety.
All of the XL facilities are HACCP (Hazard Analysis Critical
Control Point)
recognized as per the Canadian Food Inspection Agency (CFIA),
which meet or exceed the USDA requirements for export.
Following the recognized HACCP programs, highly trained Quality
Assurance technicians perform stringent inspections and microbial
sampling throughout the production process. In the primary processing
facilities, technicians monitor and verify the Critical Control
points outlined by the HACCP program, as well as perform ongoing
temperature checks on outgoing carcasses. All carcasses are visually
inspected before leaving the floors and prior to leaving the plants.
The primary processing plants are also equipped with multiple microbial
intervention steps on the processing floors.
In the packing and further processing plants, the HACCP Program
checks include incoming product monitoring, temperature monitoring,
boneless beef inspection, cut product inspection and packaging
integrity. Quality Assurance technicians have full authority to
shut down plant production if a problem is detected. In addition,
Quality Assurance technicians perform regular quality checks to
monitor color, absence of defects and adherence to cut specifications.
Furthermore, the finished product is monitored to ensure proper
packaging and labeling standards have been followed. The Quality
Assurance department is also responsible for random shelf life
testing on finished products.
XL is equipped with an in-house microbiology laboratory
to perform random tests for Salmonella,
E Coli and Total Plate Counts. XL also uses external
lab facilities to verify results.
All XL employees receive extensive HACCP training throughout
their employment in the areas of Good Manufacturing Practices,
HACCP principles, and Canadian
Food Inspection Agency regulations.
This training is reinforced regularly by the Quality Assurance
Department.
